Picture a market stall: stacks of goat cheese wheels with dark, crinkly rinds, a basket of fresh white logs, a few little pyramids dusted in ash. They’re all goat cheese. But take them home, and they each want to be treated a bit differently.
That’s the secret to storing goat cheese: first figure out which kind you have. A fresh log and an aged wheel are about as similar as a puppy and a grandpa dog. Same family, very different needs.
Keep goat cheese in the refrigerator. An unopened, vacuum-sealed fresh log keeps about two months (Laura Chenel). Once opened, keep fresh goat cheese in an airtight container and enjoy it within about five days; wrap aged goat cheese in wax or parchment paper and keep it in the crisper drawer. The USDA FoodKeeper gives soft goat cheese 1 to 2 weeks in the fridge.
The Three Kinds of Goat Cheese
- Fresh goat cheese (chèvre): the soft white log or tub. Creamy, tangy, and full of moisture. This is the most delicate one.
- Ripened goat cheese: soft cheese with a rind, like a goat’s milk brie or a log with a white, bloomy coat.
- Dry, semi-hard and aged goat cheese: firm wheels like the ones in the photo, with a harder rind and less moisture.
The French goat cheese maker Soignon sums up the rule nicely: the fresher a cheese and the higher its water content, the shorter it keeps. The more aged and dry it is, the longer it lasts.
Before You Open It
Here’s a tip that sounds too easy: don’t open the package until you need it. The American goat cheese maker Laura Chenel explains that goat cheese has a shorter shelf life once opened, because of its delicate flavor. Unopened and vacuum-sealed, a fresh goat cheese can be stored anywhere in your fridge for about two months, sometimes longer. Always check the date on the package too.
How Long Does Goat Cheese Last? Who Says What
Three sources, three slightly different answers. That’s normal: they look at different cheeses and at different things (safety versus taste).
| Source | What they say |
|---|---|
| USDA FoodKeeper | Soft cheese such as goat cheese: 1 to 2 weeks in the refrigerator, 6 months in the freezer. |
| Laura Chenel (maker) | Unopened, vacuum-sealed fresh goat cheese: about two months. Opened fresh goat cheese: ideally within about five days. |
| Soignon (maker) | With good wrapping and storage habits, cheese can last 2 to 3 weeks. Fresh, moist cheese keeps shorter than aged, dry cheese. |
Our simple rule: opened fresh goat cheese within about five days; firmer, aged goat cheese can keep longer, depending on the type and the manufacturer’s instructions. The USDA times are about safety; the makers’ times are mostly about quality, so the shorter one is the safe choice when in doubt.
After Opening: Two Kinds, Two Methods
Laura Chenel’s advice starts the same for every goat cheese: take it out of the original packaging. Then:
Fresh goat cheese (logs, crumbles, tubs)
- Put it in an airtight container.
- Keep it in the fridge and enjoy it within about five days.
- Use a clean knife or spoon. Fresh goat cheese is a moist cheese, and moist cheese is not a fan of crumbs from yesterday’s toast.
Aged and ripened goat cheese
- Wrap it in wax paper or parchment paper. For extra protection, put the wrapped cheese in an airtight glass container.
- Store it in the vegetable crisper drawer, which is a more stable, humid place.
- Avoid the coldest part of the fridge, usually the back and the bottom shelves.
Whatever the spot, your refrigerator itself should stay at 40°F or below (USDA).
Can You Freeze Goat Cheese?
Safety-wise, yes: the USDA FoodKeeper gives soft cheese such as goat cheese 6 months in the freezer. Taste-wise, it depends on the kind. Soignon explains:
- Dry and semi-hard goat cheeses handle freezing and thawing quite well.
- Fresh and ripened goat cheeses don’t: their texture and flavor can change when they thaw. Soignon does not recommend freezing ripened goat logs.
- Freeze a cheese only once, wrap it well, and put it in an airtight container. Soignon advises eating frozen cheese within two months, because freezing does not fully stop ripening.
So the USDA’s 6 months is about safety; Soignon’s two months is about taste. If you want your goat cheese to still taste like goat cheese, go with the shorter one.
Where Fresh Goat Cheese Comes From
Ever wondered how that creamy white log is made? In this video, Homesteading Family makes a simple fresh goat cheese at home. It shows why fresh goat cheese is so soft and moist, and that’s exactly why it keeps for days instead of weeks.
A video to enjoy, not a storage guide: for storing, the tips on this page still apply.
Serving Goat Cheese (and Getting It Back in the Fridge)
Laura Chenel says fresh goat cheese can go straight from the fridge to the table, because it warms up quickly. Aged goat cheese tastes better when it sits at room temperature for at least 30 minutes before serving.
Just keep an eye on the clock: perishable food shouldn’t stay out for more than 2 hours, or 1 hour above 90°F (USDA FSIS). A cheese board is a party, not a sleepover.
Mold and Off Smells
Laura Chenel keeps it simple: never eat goat cheese with an off odor or flavor. For mold, the USDA Food Safety and Inspection Service is clear:
- Soft goat cheese (chèvre) with mold: throw it away. The USDA names chevre among the soft cheeses to discard, because mold can spread below the surface of a moist cheese.
- Crumbled goat cheese with mold: throw it away, like all crumbled cheese.
- A white or ash-colored rind that came with the cheese is part of the cheese. Mold that wasn’t there when you bought it is not.
Only for a truly hard, aged goat cheese does the USDA’s hard cheese rule apply: cut away at least 1 inch around and below the moldy spot. Not sure if yours counts as hard? Then treat it as soft and throw it out.
Your Goat Cheese Questions, Answered
How long does goat cheese last once opened?
The maker Laura Chenel says opened fresh goat cheese is ideally enjoyed within about five days, kept in an airtight container. The USDA FoodKeeper gives soft cheese such as goat cheese 1 to 2 weeks in the refrigerator.
How long does unopened goat cheese last?
According to Laura Chenel, unopened and vacuum-sealed fresh goat cheese can be stored in the fridge for about two months, sometimes longer. Always check the date on the package too.
How do you store goat cheese after opening?
Remove the original packaging. Put fresh goat cheese in an airtight container. Wrap aged goat cheese in wax or parchment paper, and store it in the vegetable crisper drawer, away from the coldest part of the fridge.
Can you freeze a log of goat cheese?
It’s safe: the USDA FoodKeeper gives soft goat cheese 6 months in the freezer. But the maker Soignon says fresh and ripened goat cheeses can change in texture and flavor, and does not recommend freezing ripened logs. Dry and semi-hard goat cheeses freeze better. Soignon advises eating frozen cheese within two months.
Does goat cheese need to be refrigerated?
Yes. Keep it in the refrigerator at 40°F or below, and don’t leave it out for more than 2 hours, or 1 hour above 90°F.
Can you cut mold off goat cheese?
Not off soft goat cheese. The USDA says soft cheeses such as chevre, and all crumbled cheese, should be thrown away when moldy. Only truly hard cheese can be saved by cutting away at least 1 inch around and below the mold.
Sources & Transparency
Storage and freezer times come from the USDA FoodKeeper and from two goat cheese makers: Laura Chenel and Soignon. The rules for food left out, the refrigerator and mold come from the USDA Food Safety and Inspection Service. Where sources give different numbers, we show them side by side.
